Lead and inspire a dynamic kitchen team, overseeing the daily operation of all food services within the restaurant.
Ensure smooth and efficient service, maintaining the highest standards of food quality, timing, and presentation.
Collaborate with the Executive Chef to ensure consistent delivery of a first-class dining experience.
Take a leading role in developing creative, seasonal, and locally inspired menus that align with the restaurant’s culinary vision.
Oversee recipe development and portion control to ensure consistency and profitability.
Continuously monitor food trends and customer feedback to evolve offerings and enhance guest satisfaction.
Train, mentor, and manage kitchen staff, fostering a professional and collaborative working environment.
Conduct regular performance reviews and ongoing training to support skills development and team retention.
Manage kitchen rosters and maintain appropriate staffing levels for smooth operations during peak periods.
Maintain rigorous standards for food quality, flavor, and plating across all dishes leaving the kitchen.
Perform regular tastings and visual inspections to ensure consistency and excellence.
Respond quickly to quality issues to maintain guest satisfaction and uphold the restaurant’s reputation.
Oversee stock control, ordering, and supplier relationships to ensure top-quality ingredients and cost control.
Manage inventory and reduce waste through effective planning and monitoring.
Maintain records and assist with administrative duties such as payroll inputs, scheduling, and HACCP compliance.
Ensure full compliance with all food safety, hygiene, and health regulations.
Promote and enforce a clean, safe, and organized kitchen environment at all times.
Minimum 3–5 years of Head or Senior Sous Chef experience in a fast-paced, high-end gastro or fine dining restaurant.
Strong culinary background with a passion for modern Irish and European cuisine.
Proven leadership, communication, and organizational skills.
Highly proficient in kitchen operations, budgeting, stock control, and compliance requirements.
Ability to thrive under pressure while maintaining attention to detail and culinary excellence.
